Hearty Beef and Bacon Stew

Happy Monday everyone! Yesterday we woke up to big fluffy flakes falling softly from the sky. It was cause for celebration in our house especially when the kids realized it was sticking.

  It didn't take long for the snow gear and mittens to be donned by antsy children ready to go out and play in the rapidly accumulating snowflakes.

 Man those beautiful eyes get me!

  Of course this silly guy just wanted to eat all the snow. No reason, just wanted to.

  Of course cold winter days like these call for a hearty bowl of comfort food. Yesterday was one of those days that just begged for a bowl of hearty beef stew.

  I love this simple stew and it's loaded with meat and vegetables that make it healthy and filling. There are 2 ways to make it which means it can either be pulled together quickly or allowed to cook slowly in the slow cooker.  You also have your choice of main meats as this can be made either with beef, bison, or venison.

2 lbs ground beef (or meat of  choice)
1 tsp sea salt
1/2 tsp black pepper
8 oz bacon cut into lardons
4 medium carrots, chopped
4 medium potatoes, chopped
1 cup chopped onion
1 quart + 2 cups beef stock


Add all ingredients to a crockpot. Cover and cook on low 5-6 hours until meat is cooked through and vegetables are tender.
