Taco Soup

Today was one of those days where you're just go go go. I spent the day running errands and got home about the same time as the kids. From there it was all about putting things away and cleaning up the house. Who has time to think about dinner?

While what I really wanted to do was curl up and take a nap, which I admit did briefly happen, I knew that if I allowed myself to really snooze nobody would get fed and the natives would eventually revolt and the result wouldn't be pretty.



When time is short and I need to make something quick I pull this recipe out because it not only is quick but my kids love it and always ask for more.

1 lb ground beef
1 onion diced
1 green pepper diced
8 cups beef broth
2-3 Tbs taco seasoning, recipe here.
2 cans diced tomatoes
2 cans pinto beans
3 cans chili beans
2 cups frozen corn

Directions-

Brown ground beef, onion, and pepper until beef is cooked through and vegetables are tender.

Add taco seasoning, I start with 2 Tb and add more if needed, and the rest of the ingredients and simmer until heated through.

Serve with tortilla chips, sour cream, and cheese. Pretty much whatever suits your fancy.

*This recipe makes a good amount. I have 7 people to feed and this recipe is one that feeds us all with a little to spare. Cut recipe in half if you need a smaller amount.
