Bacon Potato and Leek Soup

Winter bacon potato and leek soup. This is a hearty version of a winter favorite.


I love soup in the winter. So warm and filling. What I'm not fond of is creamy no substance soup. What can I say, I'm not a very sophisticated gal. I like chunky hearty soups.

Unfortunately when it comes to anything leek and potato it seems that every one of them involves pureeing everything once cooked into a creamy concoction that is for finer palettes. So I decided that if I wanted something heartier I was going to have to figure it out for myself.

Bacon Potato and Leek Soup

1 bunch large leeks, washed an thinly sliced into crescents.
8 golden potatoes, washed and quartered
4 carrots, washed and chopped
4 celery stalks, washed and chopped
8 cups chicken broth. Use vegetable for vegetarian option.
1 cup heavy cream 
Bacon, sliced into small strips and cooked through
salt and pepper to taste

Throw everything but the heavy cream and bacon in a slow cooker. Cover and cook on high 4 hours or low 6 hours.
Add heavy cream and cooked bacon and stir. 
Roughly 8 servings.

This is meant to be a heartier version of traditional potato and leek soup. If you are wanting this to be creamier soup puree before serving.
